Nourishing Recipes We're Making Lately

Spring is such a beautiful time for embracing fresh, local, delicious produce that you can cook up at home and turn into a nourishing meal for yourself and your family. I've been having so much fun exploring anti-inflammatory recipes that are grain and gluten free, dairy free, and that support my body's natural detox pathways.
As a girly with hormonal imbalance, I have to do my best to stay away from excess carbs and sugars - and focus on low glycemic, anti-inflammatory meals that are tasty & nourishing, but not harmful to my body. Which is why I was so excited when I saw Haitian chef Gregory Gourdet on Pamela Anderson's cooking show, Cooking With Love.
Gregory's cookbook, Everyone's Table, has the most delicious recipes that highlight healthy cooking in a way that is so delicious, you don't even realize that anything is missing.
Last night, we made the cauliflower puttanesca, which was such a yummy alternative to the traditional pasta puttanesca - one of my favorite meals. And we've made a few other recipes from his book as well.
Here are a few nourishing meals we've had lately:
Cauliflower Puttanesca & Garlic Shrimp
We traded the traditional pasta puttanesca for this light and fresh version using cauliflower and it was so good. Salty capers, sun dried tomatoes and olives drizzled in extra virgin olive oil made for a dish that transported us to the Italian coast. We paired it with an easy shrimp dish - shrimp stir fried with olive oil, garlic, salt, pepper, and lemon. It was such a fresh and Spring-inspired meal.

Miso Cod and Thai Style Purple Cabbage
We are so fortunate to be a part of a local CSA that focuses on providing fresh, locally caught fish, here in the San Francisco Bay Area. Every other week, we pick up our fish from a local vendor that was caught just two days before.
SeaForager is the Bay Area's most sustainable seafood and we can attest that it is some of the most delicious fish we've ever had. This week, we were blessed with the most delicious cod which my husband cooked in a miso sauce alongside Thai style cabbage that was sauteed in coconut aminos, fish sauce, honey and garlic. It was so good and it's always nice to know that we're supporting local business and sustainable practices.

Gluten Free Steel Cut Oat Bowls
Oatmeal gets a lot of hate but I absolutely love oats. I think they're such an affordable and versatile meal to have for breakfast that you can dress up or dress down depending on what you're in the mood for. I've even seen TikTok's of people making savory oats (?!) which sounds amazing, but also a little intimidating. For now, I'm sticking with my sweet oat bowls.
I usually cook my steel cut oats in half water, half almond milk to ensure they're extra creamy. Then, in the last 5 minutes of cooking, I add all my fixins - maple syrup, vanilla extract, cinnamon, ginger, and sometimes fruit. I love to top it with more fruit, peanut butter, honey, hemp seeds, and even more fruit!
Such a delicious, gut friendly, and hearty way to start the day.

Glazed Chicken Thighs with Ginger and Scallions
Another amazing recipe from Gregory's cookbook, these chicken thighs were truly life-changing. Packed with flavor, perfectly crispy and juicy. My husband and I couldn't stop eating them, and have been thinking about them ever since we made them a few weeks ago. I still can't believe how good they turned out and I genuinely can not wait to make them again.

Eggs Fried in Herbs, Sweet Potatoes and Roasted Broccoli
This became our go-to breakfast during quarantine and we haven't strayed. A lot of people have told me that they don't thing of vegetables for breakfast, but I swear by it. Want to know a secret? I don't love vegetables. I wish I did, but I don't. I'd much rather have a piece of toast with butter than a plate of broccoli. But a little life hack I've discovered is that if I eat my veggies first thing in the morning, I feel accomplished for the rest of the day. Because I've made at least one healthy choice, and sometimes, one is enough.
Ever since finding a recipe from Preppy Kitchen for eggs fried in herbs and butter, I make my eggs like this at least once a week. Unfortunately, the recipe is now nowhere to be found. But it's another reason why I love to keep a kitchen garden, because I can throw in parsley, rosemary, thyme, and whatever other herbs I have growing to add so much depth to my eggs.
We then roast sweet potatoes and broccoli in olive oil, salt, pepper and garlic and we love this hearty and nourishing breakfast!

Eating "healthy" doesn't have to be boring. You don't have to eat bland chicken breast every day if you want to focus on any aspect of your health! I know there's a lot of noise out there right now about what is healthy and what's not, but just remember that the right diet is the diet that's right for YOUR body.
Don't feel bad because you can't have dairy or gluten like the crunchy moms on TikTok. Eat what makes your body feel healthy, balanced and whole.
